What Actually Happens When Coffee Beans Are Roasted

Before roasting, green coffee beans are soft, with a fresh “grassy” smell and little or no taste. It is the process of roasting that brings out the aroma and flavour that is locked inside the green coffee beans. As the beans get roasted the chemical and physical properties of the green coffee beans are transformed. However, during this process, the beans are kept moving, to ensure they don't burn.

Roasted beans weigh less because the moisture has been roasted out. They are easy to bite, ready to be ground and brewed.

Coffee Roast Levels

The most common way to describe coffee roast levels is by the colour of the roasted beans, ranging from light to dark (or extra dark).

Many coffee buyers assume that the strong, rich flavour of darker roasts indicates a higher level of caffeine, however, the truth is that light roasts actually have a slightly higher concentration.

Moreover, there is nothing like a perfectly roasted coffee. It is a personal choice that is sometimes influenced by national preference or geographic location.
